Honey Balsamic Galletto

  • 2 Galletti Vallespluga
  • 2 scallions
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • extra-virgin olive oil
  • 1/2 glass of red wine
  • 2 sprig of sage
  • 1 sprig of rosemary
  • salt and pepper


Cut each Galletto in two. Slightly heat the oil in a pan, season the Galletto and brown them. Sauté over high heat, then add salt and pepper. Sprinkle with red wine, then let it evaporate. Cover and cook over very moderate heat for about thirty minutes. Bring to boil a couple of fingers of water with the sprig of rosemary washed and tied. Remove the cooking juices and add the honey and balsamic vinegar. Stir again bringing to boiling, then add the sage too. Allow to reduce, then correct with salt and pepper.
